 - hard cheese - 200 g;
 - white bread - 3 slices (about 100 g);
 - eggs - 3 pcs.;
 - onions - 1 pc.;
 - garlic - 2 cloves;
 - greens (dill, parsley, cilantro) - 1 bunch;
 - pepper and salt to taste;
 - butter - 25 g;
 - vegetable oil - to lubricate the form;
 - water - ½ cup.
 
On a note. If desired, the set of ingredients can be varied. For example, use a combination of two varieties of cheese - hard and Adyghe. You can add something unexpected to the filling, for example, canned corn kernels.
Cooking process:
- I take the butter out of the refrigerator to soften it.
 - I wash the greens, dry and finely chop.
 - I rub cheese on a fine grater, mix with butter and herbs.
 - I break one egg, add to the resulting mixture and bring the composition to a homogeneous consistency.
 - I prepare the bread: cut the crusts, break the crumb into small pieces and pour warm water. After 10-15 minutes, I knead it with a fork to the state of gruel.
 - I peel onions, finely chop and pour into minced meat.
 - I squeeze the garlic through a press, add it there.
 - I put soaked bread in minced meat, pour in 2 eggs, add salt and pepper, mix everything thoroughly.
 - I divide the mixture into small portions. I make a cake out of each, put a spoonful of cheese filling in the middle and connect the edges towards the center. From the resulting ball I form a cutlet.
 - Spread the billets in a mold with vegetable oil and bake in the oven at a temperature of 190 ° C. The approximate heat treatment time is 30 minutes.
 
Tip.To make the cutlets juicier, they should be pre-fried in vegetable oil over low heat until a crust forms - 3-4 minutes on each side. Then the baking time will decrease on average to 15–20 minutes.
Appetizing turkey cutlets with cheese should be served hot. As a complement, any side dish is suitable: rice, buckwheat, pasta, fresh or stewed vegetables.
